Sorta.

Kinda.

Pretty much.

Actually, I shouldn’t really say that, because nothing ever seems to be “typical” in my life.  Planned out, maybe, but not typical.

However, it has been quite a busy Monday for me because I actually have energy!

No, not the “pull everything out of the closet and get rid of junk” energy, but the type that comes along with a beautiful May day where I didn’t actually have to pull myself along to get things done.  I’m enjoying all my accomplishments today! *happy dance*

It could also be that I have a 3 day work week, and it is supposed to be gorgeous on Friday and I’m thinking of planting my garden that day.  Rick & I spent a few hours putzing around the yard on Sunday moving bushes and leveling some of the land around the garden.  We are still battling the mutant weeds/trees/brush, but it’s starting to look nice.

Thursday is Graduation Ceremonies at the college where I work, and as always, we have a feast afterwards where faculty and staff are encouraged to bring a dish.  The past 2 years I was not a contributor (I blame laziness), but THIS year I AM bringing something.  Something good.  And tasty.  And sweet.  And nummy.  And made from scratch.  By me.

These, my friends, are Lemon Cream Bars.

Don’t they look delicious?

Last month, Ree from The Pioneer Woman had them showcased on her blog.  After reading how simple this recipe was (and secretly hoping that Judy would gift me with some wonderful lemons from Arizona, which she did), I just had to make them.

This is where you may recall my first shopping challenge where I bought one of the ingredients for it.  If you don’t, it’s OK.  I have those days too.  I’m just lucky I remembered where I put the offending item that wasn’t on my list.

So after I got the bread going, I whipped up a batch of these bars.  And let me tell you, if they taste half as good as they smell while they are baking, I think I may swoon.

Unfortunately, they still have to cool, so no taste testing for me until I cut them up and make a pretty presentation for Thursdays festivities.

But I will have to sample them.  After all, I have to do some quality control and make sure they are acceptable to take.

I’ll let Rick have one too.

Oh, I almost forgot to give you the results of my Monday Shopping Challenge.

I failed.

Miserably.

And it was the simple things that I knew I should have put on my list, but didn’t.  Little things like lunch items for work and creamer (that I didn’t really need, but it was on the shelf looking all pouty, so I gave in).

Two completely non-essential items were Oreos and sour cream.  Odd combination, perhaps, but both necessary items to make the Cookies and Cream Cheesecake Bars also found on Tasty Kitchen.

These puppies are getting made next Monday.

If I can wait that long.

  1. Those look yummy! I hope they taste as good as they look 🙂 Sorry for your failed shopping challenge, I think I fail almost every time I go shopping because I find stuff on sale that we don’t NEED but will use in the future.
